Add a pinch of salt to the soaked rajma, add water as needed, and cook for 3-4 whistles in a pressure cooker. Meanwhile, heat the ghee in a pan and prepare the masala. Simmer the cumin seeds for a minute. Medium heat the coarsely ground ginger and garlic until fragrant. Simmer the onions until they turn brown. Combine salt, turmeric powder, red chili powder, coriander powder, and garam masala in a mixing bowl. Add the tomatoes, mix well, and sauté until they begin to release their oil. Cook for 3-4 minutes after adding the boiled rajma to the masala. Cook for 4-5 minutes on medium heat, and then garnish with julienned ginger and coriander.

How to Make Chole

A well-known vegetarian Indian dish, chole is made with chickpeas and spices. Chole is typically served with white rice or naan. Now, let us learn to cook some Indian-style chole.

In a pressure cooker, combine the soaked chole with the water, followed by the grated ginger. Take a small square of cloth and stuff it with chai ki Patti or tea leaves, then tie the ends together to make a small potli. Add it to the pressure cooker with 12 teaspoons of salt, mix it, and cook until you hear 8-9 whistles. Check if the chole is done after 9 whistles. Now, in a Kadai, heat 2 tablespoons of oil and add the tej patta (bay leaves), followed by the cloves (laung), the dalchini (cinnamon stick), and the kali Mirch (black pepper. Once the onions are fully cooked, add the tomato paste of two tomatoes, followed by the cumin-coriander powder, some salt, and the chole masala, and mix well. Cook for 3-4 minutes or until the tomatoes are fully cooked. Cook for 5 minutes after adding the fresh dhania and mixing it in, and your favourite dish is ready.
